The jury shall comprise sommeliers, distillers, chefs, food historians and a single botanist, drawn from at least five nations.
No member of the jury may hold a commercial interest, present or past, in any entry submitted to the Awards.
Tasting is conducted in silence, in north light, at a temperature of twelve degrees Celsius. Conversation between members is reserved until conclusion of all flights.
The identities of the jury members remain confidential before judging.

Each member undertakes, by signature, to evaluate every entry on its own merits and to set aside personal preference in matters of style.
A sealed register of jury membership is kept by the Office of the Awards and is not made public.
